Let's Talk Cookies!

Dark Chocolate Cookies with Espresso is my friend Barbi's favorite chocolate cookie. If you're not a coffee lover, don't worry. There's not an overwhelming coffee flavor in these cookies. The espresso intensifies the dark chocolate flavor and these cookies are decadent. You have to try them. Find the recipe in "Karen's Favorites". Have a wonderful Valentine's weekend.

I found a very dark, rich chocolate cookie for the true chocoholic. This recipe uses relatively little flour, resulting in dense, fudge-like cookies. These cookies keep well in the freezer (but you may have a hard time waiting for them to thaw before you eat them). You can search for the recipe under "Make Mine Chocolate!"

Since tomorrow starts Chocolate Week I decided to experiment with brownies today. I used one box of brownie mix and created 4 different valentine brownies. So easy and so beautiful. Here's how to do it:   Start with your favorite brownie mix for a 13 x 9 pan and the ingredients the brownie mix calls for. Cover an 18 x 13 jelly roll pan with foil and spray with cooking spray.

I held a cookie decorating class last Saturday and it was a ton of fun. We decorated Valentine cookies and made conversation hearts. I demonstrated some of the same techniques I show in my videos such as dragging with a toothpick to create a heart border, making 3-D polka dots, using edible markers, marbling and using edible glitter and sugars. I'm holding a decorating class on Valentine's Day for fathers and daughters that belong to the Daddy's Do organization. How sweet!

Congratulations to the Pittsburgh Steelers for their Super Bowl win. I made 24 of the Cardinals and Steelers helmet cookies for the party and they went very fast. Let me know if you made cookies for your Super Bowl party.
